Chicken and Broccoli Stir-Fry

* Just barely made this and it turned out wonderful! 


Chicken and Broccoli Stir-Fry

1 lb boneless skinless chicken breasts, chopped into 1 inch pieces
2 garlic cloves, finely chopped (I used minced garlic from the jar)
2 teaspoons finely chopped ginger (I used ground ginger, just follow the recommendations on the bottle) 
1 cup chicken broth
3 tablespoons soy sauce
2 teaspoons sugar
2 cups broccoli florets (I used frozen chopped broccoli)
2 teaspoons cornstarch


1- Spray 12 inch nonstick skillet with cooking spray; heat over medium-high heat. Add chicken, garlic and ginger. Fry 2-3 minutes or until chicken is golden brown.

2- Add 3/4 cup of the broth, the soy sauce and sugar. Cover and cook over medium heat for 5 minutes, stirring twice.

3- Add broccoli. Cover and cook for about 5 minutes, stirring occasionally, until chicken is no longer pink in the center and broccoli and crisp-tender. 

4- Mix cornstarch with remaining 1/4 cup of broth; stir into chicken mixture. Cook, stirring frequently, until sauce is thickened. 

Serve with rice!   

Baked Potato Soup

This recipe is from Pinterest, the main source for everything I make!

* I absolutely love this soup! It is my go-to soup whenever I need to take soup somewhere or if I'm just having a craving. It is fairly simple and extremely tasty!


Baked Potato Soup

1 lb bacon, chopped
1 medium yellow onion, diced
1 large carrot, peeled and diced
3/4 cup diced celery
8 large Russett potatoes, peeled and diced
1/4 cup flour
2 cups chicken stock
salt and pepper to taste
4 cups heavy whipping cream

1- In a large pot, over medium-high heat, fry bacon until crisp.

2- Remove bacon and drain on paper towels, reserving half for garnish. In bacon fat, cook onion, carrots and celery until the onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.

3- Whisk in flour and stir constantly over low heat until the flour is cooked and the mixture has thickened slightly, about 5-7 minutes. Add chicken stock and half of the bacon. Season with salt and pepper.

4- Over medium-high heat, bring the soup to a simmer and cook for 25 minutes or until the potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add whipping cream and simmer for 5 minutes.

5- Adjust thickness by adding water or stock, soup should have a creamy consistency.

6- Season to taste. Garnish with toppings.

Philly Cheesesteak Sloppy Joes

I made these the other night and they were super easy and delicious!!

*side note- When I made this it didn't seem to thicken as much as I wanted it to. So I added a brown gravy packet to the mixture and let it come to a boil and it was the perfect thickness!*

Philly Cheesesteak Sloppy Joes
1 lb ground beef
1 onion, chopped
1/4 cup steak sauce
1 cup beef broth
1 green pepper, chopped
1 package sliced mushrooms
Provolone cheese slices
Buns/Rolls

In a larger skillet over medium-high heat brown the ground beef, about 5-6 minutes. Add the onion, green pepper and mushrooms and cook another 3-4 minutes, until they start to get tender. Stir in the steak sauce and beef broth, bring up to a bubble and cook about 2 minutes.

Split open rolls, place one slice of cheese on one side and toast under broiler, keep your eye on  them so they don't burn!

Place a scoopful of the meat on the bottom half of the bun, drizzle with more steak sauce and place cheesy bun on top.  

Crispy Sriracha Chicken

Crispy Sriracha Chicken
4-6 boneless skinless chicken breasts
salt and pepper to taste
2 teaspoons minced garlic
2 tablespoons sriracha hot sauce
2 tablespoons chopped fresh rosemary
juice of 1 lemon (about 2 tablespoons)
2 tablespoons olive oil
1/4 cup plain greek yogurt

Directions:

1- In a large bowl combine yogurt, olive oil, lemon juice, rosemary, sriracha, garlic, salt and pepper.

2- Place chicken breasts in a large resealable plastic bag and pour marinade mixture over them. Seal bag and toss gently to coat chicken.

3- Place bag in refrigerator and let sit 2-4 hours to marinate.

4- When chicken is fully marinated, heat oven to 375. Place chicken in an oven and broiler-safe baking dish and pour extra marinade over the top.

5- Bake chicken until cooked through, about 40-45 minutes. Heat broiler to High and cook chicken until crispy and golden brown, about 5-7 minutes.
